Rice Salad

Ingredients
- Servings: 4
- 1 cup rice, cooked
- 6 tablespoons salad oil
- 3 tablespoons vinegar or 3 tablespoons wine
- 1 teaspoon salt
- 4 tablespoons tarragon
- 1/4 cup parsley
- 1/2 cup green pepper, choped
- 1/4 cup green onion
- 1 cup peas, cooked
- 1 cucumber
- 1 cup cherry tomatoes
Recipe
- 1 cook rice and add first 4 ingredients while hot.
- 2 when chilled, add parsley, green pepper, green onion and peas.
- 3 just before serving, add: 1 cucumber peeled and cubed and 1 cup cherry tomatoes.
