Rice Salad

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 cup rice, cooked
  • 6 tablespoons salad oil
  • 3 tablespoons vinegar or 3 tablespoons wine
  • 1 teaspoon salt
  • 4 tablespoons tarragon
  • 1/4 cup parsley
  • 1/2 cup green pepper, choped
  • 1/4 cup green onion
  • 1 cup peas, cooked
  • 1 cucumber
  • 1 cup cherry tomatoes

Recipe

  • 1 cook rice and add first 4 ingredients while hot.
  • 2 when chilled, add parsley, green pepper, green onion and peas.
  • 3 just before serving, add: 1 cucumber peeled and cubed and 1 cup cherry tomatoes.
