Quinoa Salad

Ingredients
- Servings: 3
- 2 cups mixed greens
- 1/4 cup vinaigrette (any kind)
- 1/4 cup red onion, diced
- 1/4 cup red pepper, diced
- 1/4 cup yellow pepper, diced
- 1/4 cup mushroom, diced
- 1/2 cup quinoa, cooked
- olive oil
- butter
- salt and pepper, to taste
- rosemary, to taste
- thyme, to taste
Recipe
- 1 toss greens with the vinaigrette and let set.
- 2 saute onion, peppers, and mushrooms in a small amount of olive oil and butter.
- 3 salt and pepper, to taste.
- 4 add quinoa, sprinkle with rosemary and thyme.
- 5 pour over greens and serve.
