Quinoa Salad

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 3
  • 2 cups mixed greens
  • 1/4 cup vinaigrette (any kind)
  • 1/4 cup red onion, diced
  • 1/4 cup red pepper, diced
  • 1/4 cup yellow pepper, diced
  • 1/4 cup mushroom, diced
  • 1/2 cup quinoa, cooked
  • olive oil
  • butter
  • salt and pepper, to taste
  • rosemary, to taste
  • thyme, to taste

Recipe

  • 1 toss greens with the vinaigrette and let set.
  • 2 saute onion, peppers, and mushrooms in a small amount of olive oil and butter.
  • 3 salt and pepper, to taste.
  • 4 add quinoa, sprinkle with rosemary and thyme.
  • 5 pour over greens and serve.
