Quinoa Salad

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 1/2 cups quinoa
  • 2 1/2 cups water
  • 6 tablespoons orange juice
  • 2 tablespoons lime juice
  • 1 tablespoon balsamic vinegar
  • 1/4 teaspoon salt
  • 1/2 cup corn
  • 1/2 cup scallion, sliced
  • 1/2 cup red bell pepper, diced
  • 2 tablespoons red onions, finely chopped

Recipe

  • 1 bring water to a boil. cook quinoa.
  • 2 in a bowl, combine all the other ingredients. when quinoa has cooled fold into dressing and vegetables.
  • 3 serve at room temperature or cold.
