Ingredients

- 1 1/2 cups quinoa
- 2 1/2 cups water
- 6 tablespoons orange juice
- 2 tablespoons lime juice
- 1 tablespoon balsamic vinegar
- 1/4 teaspoon salt
- 1/2 cup corn
- 1/2 cup scallion, sliced
- 1/2 cup red bell pepper, diced
- 2 tablespoons red onions, finely chopped
Recipe
- 1 bring water to a boil. cook quinoa.
- 2 in a bowl, combine all the other ingredients. when quinoa has cooled fold into dressing and vegetables.
- 3 serve at room temperature or cold.
