Pesto Primavera

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • 16 ounces frozen mixed vegetables (1 bag) or 16 ounces stir fry vegetables (1 bag)
  • 2 tablespoons olive oil
  • 12 ounces spaghetti, thin spaghetti, cooked
  • 1/2 cup pesto sauce
  • 2 fresh garlic cloves, finely chopped
  • 1/3 cup olive oil
  • 1/2 cup chicken broth or 1/2 cup vegetable broth
  • 1/3 cup parmesan cheese

Recipe

  • 1 pour 2 tbsp olive oil into large pan, add frozen vegetables and garlic and cook until thawed but still crisp.
  • 2 add fresh vegetables of your choosing, pesto sauce, broth, and stir.
  • 3 when everything has reached the same temperature, add pasta and olive oil.
  • 4 toss, serve with parmesean cheese.
