Quinoa With Cherries And Herbs

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • 2 cups vegetable stock
  • 1 cup quinoa
  • 2 shallots, minced
  • 1/4 cup fresh orange juice
  • 1 tablespoon butter
  • 1/2 cup dried cherries, reconstituted with madeira, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • salt, to taste

Recipe

  • 1 over medium heat, melt butter and sweat shallots.
  • 2 add quinoa, stir in pan to brown slightly.
  • 3 add stock and orange juice.
  • 4 bring to full simmer.
  • 5 taste and adjust salt if needed.
  • 6 remove from heat, cover and steam for about 15-20 minutes.
  • 7 (optional) chill for 20 minutes.
  • 8 add cherries and herbs.
