Pasta With Tenerumi

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 3
  • 2 cups spinach (or leaves from cucuzza vine)
  • 1/2 lb dried long pasta
  • 1/2 medium onion, thinly sliced
  • 1 medium potato, cut into small cubes
  • extra virgin olive oil
  • sea salt and pepper
  • parmesan cheese, for grating (optional)

Recipe

  • 1 add olive oil to a sauce pan, fry onions with medium heat till tender. add the potato, cook for about 5 minutes, then add the tenerumi leaves. stir well and add a glass of water and 1/2 tsp of salt.
  • 2 let simmer until the vegetables are tender. toss with cooked pasta. adjust the seasoning.
  • 3 remove from heat.
  • 4 transfer to serving plates, drizzle some olive oil and grated parmesan.
  • 5 buon apetito!
