Pasta With Tenerumi

Ingredients
- Servings: 3
- 2 cups spinach (or leaves from cucuzza vine)
- 1/2 lb dried long pasta
- 1/2 medium onion, thinly sliced
- 1 medium potato, cut into small cubes
- extra virgin olive oil
- sea salt and pepper
- parmesan cheese, for grating (optional)
Recipe
- 1 add olive oil to a sauce pan, fry onions with medium heat till tender. add the potato, cook for about 5 minutes, then add the tenerumi leaves. stir well and add a glass of water and 1/2 tsp of salt.
- 2 let simmer until the vegetables are tender. toss with cooked pasta. adjust the seasoning.
- 3 remove from heat.
- 4 transfer to serving plates, drizzle some olive oil and grated parmesan.
- 5 buon apetito!
