Orange-ginger Couscous

Total Time: 25 mins Preparation Time: 20 mins Cook Time: 5 mins

Ingredients

  • Servings: 5
  • 1 teaspoon grated orange rind
  • 2 cups fresh orange juice
  • 1/3 cup craisins
  • 1/2 tablespoon butter or 1/2 tablespoon margarine
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1 teaspoon minced fresh ginger
  • 1 (10 ounce) package couscous
  • 1/4 cup sliced almonds, toasted

Recipe

  • 1 add the first 7 ingredients to a saucepan; bring to a boil over medium heat, stir frequently.
  • 2 remove saucepan from heat.
  • 3 add in couscous; stir to combine.
  • 4 cover and let stand 5 minutes.
  • 5 fluff with a fork.
  • 6 stir in almonds; serve.
