Orange-ginger Couscous

Ingredients
- Servings: 5
- 1 teaspoon grated orange rind
- 2 cups fresh orange juice
- 1/3 cup craisins
- 1/2 tablespoon butter or 1/2 tablespoon margarine
- 1/2 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1 teaspoon minced fresh ginger
- 1 (10 ounce) package couscous
- 1/4 cup sliced almonds, toasted
Recipe
- 1 add the first 7 ingredients to a saucepan; bring to a boil over medium heat, stir frequently.
- 2 remove saucepan from heat.
- 3 add in couscous; stir to combine.
- 4 cover and let stand 5 minutes.
- 5 fluff with a fork.
- 6 stir in almonds; serve.
