Medveg

Total Time: 40 mins Preparation Time: 30 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 4 large tomatoes
  • 1 red pepper
  • 1 yellow pepper
  • 1 green pepper
  • 1 eggplant
  • 2 onions
  • 2 tablespoons olive oil
  • 3 garlic cloves
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 2 tablespoons balsamic vinegar
  • 200 g orzo pasta
  • 200 g tuna (canned)

Recipe

  • 1 roughly cube all vegetables.
  • 2 spray baking tray with olive oil and put veg in one layer.
  • 3 drizzle with balsamic vinegar & olive oil, crushed garlic,salt & pepper.
  • 4 roast in hot oven appx. 10 minutes.
  • 5 remove from tray and mix with flaked tuna.
  • 6 serve over pasta.
