Potato Vegetable Fry

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 1 cup rice (feel free to use other types)
  • 1 medium potato
  • 1/4 medium onion
  • 1 stalk asparagus
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon black pepper
  • 2 garlic cloves
  • 1/4 cup olive oil
  • 1/2 cup water

Recipe

  • 1 begin to prepare rice according to your preferences.
  • 2 put oil in pan and place on medium heat.
  • 3 slice potatoes into 1/3" slices and place in oil. cut asparagus into 1" sections and place in pan. chop garlic and add to pan. add the rest of the ingredients and mix well.
  • 4 leave on medium heat while rice is cooking. add little bits of water over the next 20 minutes to the vegetable mix to keep moist.
  • 5 when rice is finished, place on a plate in a mound. put potato mix over rice and enjoy!
