Potato Vegetable Fry

Ingredients

- 1 cup rice (feel free to use other types)
- 1 medium potato
- 1/4 medium onion
- 1 stalk asparagus
- 1/2 teaspoon chili powder
- 1/4 teaspoon black pepper
- 2 garlic cloves
- 1/4 cup olive oil
- 1/2 cup water
Recipe
- 1 begin to prepare rice according to your preferences.
- 2 put oil in pan and place on medium heat.
- 3 slice potatoes into 1/3" slices and place in oil. cut asparagus into 1" sections and place in pan. chop garlic and add to pan. add the rest of the ingredients and mix well.
- 4 leave on medium heat while rice is cooking. add little bits of water over the next 20 minutes to the vegetable mix to keep moist.
- 5 when rice is finished, place on a plate in a mound. put potato mix over rice and enjoy!
