Party Chicken And Pasta Salad

Total Time: 40 mins Preparation Time: 30 mins Cook Time: 10 mins

Ingredients

  • Servings: 12
  • 16 ounces rotini pasta
  • 4 cups cubed cooked chicken
  • 1 cup thinley sliced celery
  • 1/2 cup chopped green onion
  • 12 ounces snow peas, trimed, halved crosswise
  • 2 cups red seedless grapes or 2 cups green grapes, halved
  • 1 (8 ounce) can pineapple tidbits, drained, reserving liquid
  • 1 cup slivered almonds, toasted
  • 6 -8 leaves lettuce
  • 1 cup mayonnaise
  • 2 tablespoons finely chopped fresh gingerroot
  • 1 teaspoon garlic salt
  • 2 tablespoons soy sauce
  • 2 tablespoons honey

Recipe

  • 1 cook pasta according to package directions.
  • 2 drain.
  • 3 rinse with cold water.
  • 4 drain well.
  • 5 in a very large bowl, combine all other salad ingredients except almonds and lettuce.
  • 6 in a small bowl combine all dressing ingredients including 2 t pineapple juice: mix well.
  • 7 add pasta and half the almonds to the salad mixing gently.
  • 8 add dressing, toss to coat.
  • 9 line serving bowl with lettuce.
  • 10 spoon salad over lettuce.
  • 11 sprinkle with remaining almonds.
