Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 6

  • 1 large onion
  • 2 cloves garlic
  • 2 large vine-ripened tomatoes
  • 2 tablespoons wine vinegar
  • 2 tablespoons chopped fresh parsley

Recipe

  • 1 fill a large pot with salted water and bring to a boil for beans and orzo.
  • 2 chop onion and mince garlic.
  • 3 core and seed tomatoes.
  • 4 cut into quarters lengthwise, and then into 1/4 inch thick slices.
  • 5 in a large skillet cook onion and garlic in oil over medium high heat until onion is softened.
  • 6 add tomatoes and cook, stirring, until tomatoes are softened, about 2 minutes.
  • 7 remove from heat.
  • 8 have a bowl of ice and cold water ready.
  • 9 drop beans into the boiling, salted water and blanch 1 minute.
  • 10 with a large slotted spoon or mesh colander, transfer beans to ice water to stop cooking.
  • 11 drain beans well and pat dry.
  • 12 add beans to tomato mixture and return the water in pot to a boil.
  • 13 boil orzo until al dente and drain.
  • 14 add orzo to the vegetable mixture and combine with vinegar, parsley, feta, and salt and pepper to taste.
  • 15 toss to combine well.
