Greek Pasta Bake

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 8
  • 1 (12 ounce) package whole wheat penne
  • 4 cups cubed cooked chicken breasts
  • 1 (29 ounce) can tomato sauce
  • 1 (14 1/2 ounce) can diced tomatoes, drained
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 2 (2 1/4 ounce) cans sliced ripe olives, drained
  • 1/4 cup chopped red onion
  • 2 tablespoons chopped green peppers
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 cup shredded part-skim mozzarella cheese
  • 1/2 cup crumbled feta cheese

Recipe

  • 1 cook pasta according to package directions and drain.
  • 2 in a bowl, combine pasta, chicken, tomato sauce, tomatoes, spinach, olives, onion, green pepper, basil and oregano.
  • 3 transfer to a 13-in. x 9-in. x 2-in. baking dish coated with cooking spray.
  • 4 sprinkle with cheeses.
  • 5 bake, uncovered, at 400° for 25-30 minutes or until heated through and cheese is melted.
