Orzo Saucepan Pudding

Ingredients

- 3 1/2 cups milk
- 1/3 cup sugar
- 1/2 cup orzo pasta
- 1/2 teaspoon vanilla extract
Recipe
- 1 combine the milk and sugar in a small heavy saucepan.
- 2 scald milk, stirring, over medium-low heat.
- 3 stir in orzo.
- 4 cook,stirring frequently and adjusting the heat to prevent milk from boiling over, until mixture is very thick and orzo tender to the bite, 20 to 25 minutes.
- 5 off heat, stir in the vanilla.
- 6 pour mixture into a large bowl or 4 individual custard cups.
- 7 cool slightly.
- 8 serve warm or at room temperature.
