Orzo Saucepan Pudding

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 3 1/2 cups milk
  • 1/3 cup sugar
  • 1/2 cup orzo pasta
  • 1/2 teaspoon vanilla extract

Recipe

  • 1 combine the milk and sugar in a small heavy saucepan.
  • 2 scald milk, stirring, over medium-low heat.
  • 3 stir in orzo.
  • 4 cook,stirring frequently and adjusting the heat to prevent milk from boiling over, until mixture is very thick and orzo tender to the bite, 20 to 25 minutes.
  • 5 off heat, stir in the vanilla.
  • 6 pour mixture into a large bowl or 4 individual custard cups.
  • 7 cool slightly.
  • 8 serve warm or at room temperature.
