Ski Day Chicken Casserole

Ingredients

- 6 tablespoons butter or 6 tablespoons margarine
- 1/2 cup all-purpose flour
- 3 cups chicken stock
- 2 cups sour cream
- 1/2 cup wine
- 1 dash nutmeg
- salt and pepper, to taste
- 1 lb egg noodles, cooked
- 4 1/2 cups chopped cooked chicken meat
- 1 lb mushroom, sliced and cooked
- 1 cup soft breadcrumbs
- 1/2 cup parmesan cheese
Recipe
- 1 preheat oven to 350 degrees.
- 2 melt 1/2 cup butter in a saucepan, over medium heat, and whisk in flour; stirring constantly, cook 1 minute.
- 3 add stock, sour cream, and wine.
- 4 cook until thickened, stirring constantly.
- 5 add nutmeg, salt and pepper.
- 6 arrange the noodles in a 13x9 inch baking dish.
- 7 layer the chicken, mushrooms and then sauce to cover.
- 8 melt remaining 2 tablespoons butter and mix with the bread crumbs.
- 9 top the casserole with the buttered crumbs and sprinkle with parmesan.
- 10 bake for 30 minutes or until heated through and bubbly.
