Ski Day Chicken Casserole

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 6 tablespoons butter or 6 tablespoons margarine
  • 1/2 cup all-purpose flour
  • 3 cups chicken stock
  • 2 cups sour cream
  • 1/2 cup wine
  • 1 dash nutmeg
  • salt and pepper, to taste
  • 1 lb egg noodles, cooked
  • 4 1/2 cups chopped cooked chicken meat
  • 1 lb mushroom, sliced and cooked
  • 1 cup soft breadcrumbs
  • 1/2 cup parmesan cheese

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 melt 1/2 cup butter in a saucepan, over medium heat, and whisk in flour; stirring constantly, cook 1 minute.
  • 3 add stock, sour cream, and wine.
  • 4 cook until thickened, stirring constantly.
  • 5 add nutmeg, salt and pepper.
  • 6 arrange the noodles in a 13x9 inch baking dish.
  • 7 layer the chicken, mushrooms and then sauce to cover.
  • 8 melt remaining 2 tablespoons butter and mix with the bread crumbs.
  • 9 top the casserole with the buttered crumbs and sprinkle with parmesan.
  • 10 bake for 30 minutes or until heated through and bubbly.
