Skillet Minestrone Meal

Ingredients

  • Servings: 6
  • 1 lb ground beef
  • 2 (14 1/2 ounce) cans diced tomatoes, undrained
  • 2 cups beef broth
  • 1/4 cup red wine
  • 1 tablespoon italian seasoning
  • 1 1/2 cups uncooked elbow macaroni
  • 1 (16 ounce) can kidney beans
  • 1 (15 ounce) can garbanzo beans
  • 1 (14 1/2 ounce) can french-cut green beans
  • salt and pepper

Recipe

  • 1 drain and rinse beans; set aside.
  • 2 brown the beef in a large skillet; drain fat.
  • 3 add the tomatoes, broth, wine, seasoning, macaroni and beans; bring to a boil.
  • 4 reduce heat, cover and simmer until macaroni is tender and most of the liquid is absorbed; about 15 minutes.
