Orzo With Onions And Mushrooms

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 1 large onion, peeled, chopped
  • 8 ounces mushrooms, chopped
  • 3 tablespoons butter
  • salt, to taste
  • pepper, freshly ground, to taste
  • 1 lb orzo (2 cups)
  • 1 chicken bouillon cube

Recipe

  • 1 melt the butter in a large skillet; add the chopped onions and mushrooms.
  • 2 season with salt and pepper.
  • 3 cook gently over medium heat, stirring occasionally, until soft (about 20-25 minutes).
  • 4 meanwhile, bring a pot of water to boil over high heat.
  • 5 once it comes to a full boil add the bouillon and orzo.
  • 6 cook until the orzo is tender.
  • 7 drain orzo and toss with the cooked onions and mushrooms.
  • 8 taste and add additional seasoning if desired.
