Orzo With Onions And Mushrooms

Ingredients

- 1 large onion, peeled, chopped
- 8 ounces mushrooms, chopped
- 3 tablespoons butter
- salt, to taste
- pepper, freshly ground, to taste
- 1 lb orzo (2 cups)
- 1 chicken bouillon cube
Recipe
- 1 melt the butter in a large skillet; add the chopped onions and mushrooms.
- 2 season with salt and pepper.
- 3 cook gently over medium heat, stirring occasionally, until soft (about 20-25 minutes).
- 4 meanwhile, bring a pot of water to boil over high heat.
- 5 once it comes to a full boil add the bouillon and orzo.
- 6 cook until the orzo is tender.
- 7 drain orzo and toss with the cooked onions and mushrooms.
- 8 taste and add additional seasoning if desired.
