Pasta With Tuna Tomatoes And Capers

Ingredients

  • Servings: 6
  • 1 lb vine ripened tomato, diced
  • salt
  • 12 ounces bite size pasta (penne)
  • 2 (5 ounce) cans tuna packed in oil, not drained
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1/2 cup capers, drained
  • 4 ounces crumbled feta cheese, plus extra for topping
  • 1/4 cup fresh basil or 1/4 cup fresh parsley

Recipe

  • 1 prepare tomatoes and place in medium bowl. sprinkle lightly with salt.
  • 2 meanwhile boil 1 quarts of water with some salt to cook the pasta. cook partly covered until tender. drain and then return pasta to pot.
  • 3 add tuna (with the oil), garlic, oregano, capers, feta and basil (or parsley) to tomatoes. toss to coat.
  • 4 add tomato mixture to pasta. toss to coat again.
  • 5 serve with extra feta cheese sprinkled on top.
