Pasta With Tuna Tomatoes And Capers

Ingredients

- 1 lb vine ripened tomato, diced
- salt
- 12 ounces bite size pasta (penne)
- 2 (5 ounce) cans tuna packed in oil, not drained
- 3 garlic cloves, minced
- 1 teaspoon dried oregano
- 1/2 cup capers, drained
- 4 ounces crumbled feta cheese, plus extra for topping
- 1/4 cup fresh basil or 1/4 cup fresh parsley
Recipe
- 1 prepare tomatoes and place in medium bowl. sprinkle lightly with salt.
- 2 meanwhile boil 1 quarts of water with some salt to cook the pasta. cook partly covered until tender. drain and then return pasta to pot.
- 3 add tuna (with the oil), garlic, oregano, capers, feta and basil (or parsley) to tomatoes. toss to coat.
- 4 add tomato mixture to pasta. toss to coat again.
- 5 serve with extra feta cheese sprinkled on top.
