Penne Alla Vodka

Ingredients

- 12 ounces penne pasta, cooked
- 2 shallots, minced
- 2 tablespoons butter
- 1 garlic clove, minced
- 1 pinch red pepper
- 1/2 cup vodka
- 28 ounces crushed tomatoes
- salt, to taste
- 2/3 cup heavy cream
- 1/2 cup parmesan cheese, grated
- 1/2-1 cup basil, torn
Recipe
- 1 cook shallots in a skillet with butter over medium heat, 3 minutes.
- 2 add 1 minced garlic clove and a pinch of red pepper flakes and cook 30 seconds. remove from the heat.
- 3 add the vodka, crushed tomatoes, and salt to taste.
- 4 simmer, stirring, 7 minutes.
- 5 stir in the heavy cream and simmer until thickened, 3 minutes.
- 6 stir in parmesan cheese and the basil.
- 7 toss with cooked penne, adding some pasta-cooking water to loosen.
