Penne Alla Vodka

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • Servings: 8
  • 12 ounces penne pasta, cooked
  • 2 shallots, minced
  • 2 tablespoons butter
  • 1 garlic clove, minced
  • 1 pinch red pepper
  • 1/2 cup vodka
  • 28 ounces crushed tomatoes
  • salt, to taste
  • 2/3 cup heavy cream
  • 1/2 cup parmesan cheese, grated
  • 1/2-1 cup basil, torn

Recipe

  • 1 cook shallots in a skillet with butter over medium heat, 3 minutes.
  • 2 add 1 minced garlic clove and a pinch of red pepper flakes and cook 30 seconds. remove from the heat.
  • 3 add the vodka, crushed tomatoes, and salt to taste.
  • 4 simmer, stirring, 7 minutes.
  • 5 stir in the heavy cream and simmer until thickened, 3 minutes.
  • 6 stir in parmesan cheese and the basil.
  • 7 toss with cooked penne, adding some pasta-cooking water to loosen.
